Well, I think Kevin is well-suited in the Peter Gabriel and Neil Young style, so my top two cover choices are simple piano pieces:
"Here Comes the Flood" or "The Drop" by Peter Gabriel "Philadelphia" by Neil Young
I have lots of others. I gotta brainstorm a bit. I basically would love to hear Kevin play and sing a few songs with just a piano.

actually i would much rather see some others cover Kevin as he has such brilliant compositions and i think theres a lot of places to take them. but if i had to have Moore doing a cover how about a version of autumn leaves?? www.youtube.com/watch?v=9IDUxk9sSXIseriously think about what he could do with that!

Kevin's voice, and introverted personality/style, is so analogous to Neil Young's persona that I would love to see Kevin cover some other Young songs.
The exception being that I would love to see Kevin do a Neil Young cover in the vein of Standby (Looks like Rain) - which is an acoustic song augmented by electronic musical depth; beyond acoustic guitar, bass, drums, there is a whole other world of synth flourishers - subtle electronic articulations that add so much more to the requisite rock/folk elements.
